gigi's lobster risoto

Ingredients

1-2 T butter
1 med leek – washed well & sliced
6-8 spears asparagus – cut in ½ inch pieces – quick cooked in microwave
1 cup Arborio rice
¼ cup brandy
2 cups lobster or shrimp broth
1 cup lobster – packed

Romano
fresh ground black pepper

Directions

Sauté the leek in the butter till just wilted
Add brandy simmer on low heat
add rice – add broth ¼ cup at a time – stirring till absorbed – continue to add till rice is creamy
this is a slow process takes 30 to 45 min for rice to be cooked
add lobster & asparagus cook till heated through

top with a drizzle of truffle oil (optional)
fresh pepper and slices of Romano
