1 head cauliflower

1- 2 tablespoon extra-virgin olive oil
5 thyme springs


Preheat oven to 400°F

Cover a rimmed baking tray with aluminum foil.

Break up the cauliflower head into florets. Halving the larger pieces.
Place on cauliflower pieces on the prepared baking tray.
Drizzle with olive oil, season with salt and pepper.
Place thyme springs on top.
Roast for 25 minutes, or until it just begins to brown.
