Total Time:
5 to 12 hours

Ingredients

2 ½ cups dry lentils
2 cups carrots, chopped
2 cups celery, chopped
2 cups onions, chopped
3 garlic cloves, sliced
½ teaspoon dried thyme
½ teaspoon Gigi’s Hot & Sassy or ½ tea cayenne
32 oz vegetable broth
3 cups water
1 28oz can crushed tomatoes
¾ lb ham steak cut into cubes
3-4 slices of uncooked bacon – cut up
fresh ground black pepper, and salt to taste

Directions

Rinse lentils.

Place all ingredients except the pepper into a 4-6 quart slow cooker.

Cover and cook on low for at least 12 hours, or high for at least 5 hours.
I prepared it with 3 hours at hight then turned the heat to low for an additional 3 hours

Taste to adjust seasonings. Season with pepper and remove the before serving.
