1 teaspoon olive oil
2 cloves garlic sliced thin
1 cup sliced celery
½ – 1 cup chopped onion
4-5 stalks Swiss chard chopped
1 teaspoon crushed red pepper
2 to 3 shredded cooked chicken breasts
2 – 28 oz can diced tomatoes, un-drained
1 -32 oz box fat-free, less-sodium chicken broth
1/2 cup crumbled Gorgonzola cheese
Heat olive oil in a large nonstick skillet over medium-high heat.
Add garlic & sauté 1 minute.
Add celery, onion & pepper, sauté 6 minutes or until mixture is heated through.
Add tomatoes and broth; bring to a simmer.
Cook 30 minutes.
Add chicken till heated.
Add swiss chard simmer till wilted
Serve & sprinkle with cheese.
For the cooked chicken I pouch 2 large breasts or use a store roasted bird.
Substitute any type of blue cheese, feta or goat cheese, if you prefer.
